George Harbaugh was born in the Palatinate, the German region on the upper Rhine, in February 1726. The Moravian records of Pennsylvania wrote his name Herbach and gave his birth as 20 February 1726 "at Geistweyler bey Keysers Lautern in der Pfaltz," a hamlet near the town of Kaiserslautern. A family history of 1947 gives the 10th, at Kirschweiler Hof near Kaiserslautern. He was the eldest son of Yost Harbaugh, and the same Moravian record says he came to America in 1738, aged about twelve. Family tradition had long said that the Harbaughs were Swiss. His birth entry is the paper that disproved it.

On 4 October 1746 he married Catharina Williard, the widow of a Bender, at Kreutz Creek in York County, Pennsylvania. She was four years older than he was and had come to America that same year. He took his first communion with the Moravian congregation at Lancaster on 18 May 1752, and on 29 April 1754 moved from there to the Monocacy, the Moravian settlement in Frederick County, Maryland, that grew into Graceham.

About 1760 he moved again, into the valley in the Catoctin Mountain that still carries the family's name, in what became the Hauvers District of Frederick County. There was no road up the valley then, only a path. The family had to unload their goods and leave the wagons at its eastern end.

His children were George in 1747, Anna Margaret in 1749, John in 1750, Juliana in 1752, Anna Maria in 1754, David in 1756 and Anna Regina in 1759. David died unmarried in 1784, at twenty eight, and the Graceham church book remembered him in one line: "He was quiet and obedient to his parents."

George drowned in Falls Creek on 19 February 1787, aged sixty one, and was buried at Graceham. Catharina died on 12 January 1791.
