Frederick Carl Haass, called Fritz, was born on 1 November 1862 in Medina County, Texas, the Alsatian colony west of San Antonio. His memorial names his parents as Frederick Haass, born in 1834 in Germany, and Barbara Christilles, who died in 1869 when Fritz was six. His brothers and sisters were George Louis, Mary Anna, who married an Ahr, Sybilla, who died at eleven, and Henry F. Haass. An older half-sister, Katherina Meyer, married a Vonflie.

Fritz married late. His wife, Mary Louisa Hutzler, called Louisa, was nineteen years younger than he was. Their first child, Charles Fred, was born in May 1903, when Fritz was forty. Mathilda followed in 1907, Sebastian in 1909, Paul Frederick in 1914 at Devine, Mary Louise in 1917, and Helen Cecilia in 1919 at Noonan. Paul said Alsatian was his first language, so it was the language of Fritz's house.

Fritz died on 7 December 1928, at 66, when his youngest child was nine. He was buried in the St. Louis Catholic Cemetery at Castroville. Louisa outlived him by 37 years and later married Louis Gerloff, but she was buried beside Fritz, under a stone that reads "Father Fritz" and "Mother Louisa."
